Hubert B. Van Hoof

Hubert B. “Bert” Van Hoof is a Professor and Director of the Penn State School of Hospitality Management, a program with 740 undergraduate students, 20 graduate students, and 29 full-time faculty members at the University Park Campus. The School offers two on-line Associate Degree programs focusing on hospitality management and management dietetics, and is the academic home to the Hospitality Leadership Institute, the Center for Food Innovation, as well as a satellite program at the Penn State Berks-Lehigh campus.
Before he became director of the Penn State School of Hospitality Management on July 1 2004, he was a professor and Assistant Dean at the School of Hotel and Restaurant Management at Northern Arizona University (NAU) from 1991 to 2004
Van Hoof has authored and co-authored over fifty articles, is the lead editor and contributing author of the textbook A Host of Opportunities: Introduction to Hospitality Management (2nd. Ed.) and the Executive Editor of the Butterworth-Heinemann Series of Hospitality Management textbooks. From 1998 until 2003, Van Hoof served as the executive editor of The International Journal of Hospitality Information Technology. He reviews for numerous journal and conferences, and serves on several editorial boards, as well as on the executive boards of both the Pennsylvania Restaurant Association and the Pennsylvania Tourism and Lodging Association.
He received his Ph.D. in public administration from Arizona State University in 1996, and his master’s degree in hospitality management from the University of Houston in 1991. He also received his bachelor’s and master’s degrees in English Language and Literature from the University of Nijmegen, The Netherlands in 1982.

Arun Upneja BS, MBA, PhD |
Arun Upneja is an Associate Professor of Hospitality Management and Professor-In-Charge of
International Development for the School of Hospitality Management at Penn State University. He has a
Ph.D. in Business Administration specializing in Accounting, an M.B.A and B.S. in Hotel and Restaurant
Management, all from University of Houston. He also has a B.A. in Economics from the University of
Jammu (India). In addition, Dr. Upneja has passed all parts of the CPA exam.
Dr. Upneja’s professional experience includes six years of managerial level employment in the Food &
Beverage department at the Taj Mahal Intercontinental hotel in Bombay and ten years as a faculty
member in the Hospitality Program at Penn State University. Dr. Upneja is very actively involved in
Executive Education, having lectured extensively in North America, South America, Europe, India, and
the Far East. His teaching primarily is in the areas of Managerial/Financial accounting and
decision-making and at the graduate level, he teachers in the areas of research design and
methodology. His research interests are focused on valuation of hospitality firms and financial
analysis. His research has been published in the Journal of Hospitality & Tourism Research, the
Journal of Hospitality & Tourism Education, Cornell Quarterly, Environmental Management, Journal of
Travel Research, Journal of Foodservice Business Research, Advances in Hospitality and Leisure, and
Journal of Hospitality Financial Management among others. Dr. Upneja is a regular presenter in
research conferences and has made over fifty presentations. Dr. Upneja is also very active on
non-profit boards, having served as the President of State College Suzuki Program and as the treasurer
of I-CHRIE, the association of hospitality educators worldwide.

David A. Cranage

David Cranageis an Associate Professor of Hospitality Marketing in Penn State’s School of Hospitality Management.
He holds a PhD in Marketing (Consumer Behavior) from the College of Business at The Pennsylvania State University,
an MBA (Quantitative Business Analysis) also from the College of Business, a BS in Food Service and Housing Administration from Penn State, and an Associate of Occupational Studies (Culinary Arts) from the Culinary Institute of America.
He is a member of the International CHRIE, the Hotel Sales Marketing Association, and the Penn State Hotel and Restaurant Society. Dr. Cranage’s research focus is in informed choice – customer empowerment for satisfaction and loyalty as well as health and wellness in the hospitality industry.
His articles have appeared in the Journal of Hospitality and Tourism Research, The International Journal of Hospitality Management,
The Journal of Services Marketing, The Journal of Hospitality and Leisure Marketing,
The Journal of Foodservice Business Research, Foodservice Research International, The International Journal of Contemporary Hospitality Management, Topics in Clinical Nutrition, Journal of Child Nutrition and Management, Journal of American College of Health,
The Journal of Hospitality Financial Management,
and The Hospitality Research Journal, and has authored and co-authored chapters for the book Introduction to Hotel and Restaurant Management (6th and 7th Editions). Dr. Cranage has been a reviewer for The Journal of Foodservice Business Research, The International Journal of Hospitality Management,
The Journal of Travel and Tourism Management, and The International Journal of Forecasting.
Dr. Cranage has presented papers at several national and international technical and professional conferences and participated in numerous seminars and workshops.
Dr Cranage is also the editor of the Journal of Foodservice Business Research. The Journal of Foodservice Business Research provides an essential overview of work being done in all areas of foodservice, serving as a vehicle to promote the cross-fertilization of ideas.
